Shopping list for the meatballs
500g ground beef
2 tablespoons breadcrumbs
2 tablespoons milk
1 small free-range organic egg
1 clove garlic, finely chopped
fresh parsley, chopped
20g Parmesan cheese
1 teaspoon Italian herbs, to taste
sea salt and freshly ground pepper
2 tablespoons olive oil
Shopping list for the tomato sauce
1 onion, finely chopped
1 clove garlic, finely chopped
1 can tomatoes, crushed
2 tablespoons tomato puree
1-2 bay leaves
fresh parsley, chopped
sea salt and freshly ground pepper, to taste
Optional: a green salad on the side
In the summer we like to eat pasta, tasty and easy & quick to prepare. For the vegetarians among us we make the tomato sauce in a separate pan. No problem! Then we all have a nice meal together, in the garden. Everyone happy and that's how we like it!
How to make Italian meatballs in tomato sauce
Grate the cheese and set it aside for now.
Place ground beef, egg, parsley, breadcrumbs in a large bowl.
Mix in garlic, milk, cheese, salt, pepper and Italian herbs.
Roll the mixture into little balls between your hands.
Place a large pan on medium heat and add the olive oil to it
Add the meatballs when it sizzles.
Stir-fry them for 6-8 minutes.
Remove the meatballs from the pan, keep warm.
Do mind! The meatballs are not cooked yet, you let them simmer in the sauce later on
How to cook the tomato sauce
Chop the onion finely and fry it.
Press and add the garlicto the pan.
Add the tomato pulp from the tin.
Stir in the tomato puree.
Add the bay leaves to the tomato sauce and season the sauce with freshly ground pepper and sea salt
Add the meatballs to the sauce.
Stir meatballs and sauce briefly together.
Place the lid on the pan.
Bring the sauce to a boil, move the pan to the smallest burner and turn the heat down
Let the tomato sauce simmer for about 10 minutes and stir occasionally until the meatballs are cooked through
Meanwhile cook the pasta as indicated on the packaging.
Drain the pasta, plate up and sprinkle with some extra grated parmesan.
We also serve a simple green salad on the side
