200g plain flour
100g white caster sugar
1 tablespoon vanilla sugar
150g cold butter cubes
1 free range organic egg yolk
a dash of salt
150g icing sugar
1 free range organic egg white
a few drops lemon juice
food colouring, orange and green
These carrot shaped vanilla cookies are Dutch shortbread, a well loved traditional cookie in Holland. They are just right for Sinterklaas because of the carrot shape. Sinterklaas' horse loves these cookies and the kids in the Netherlands do too.
How to make the biscuits
Place the cookie ingredients into a bowl.
Mix the ingredients with the dough hooks.
Keep mixing until you get big crumbs.
Then knead the dough quickly by hand.
Preheat the oven to 175°C
Wrap the dough in cling film and place it 30 minutes in the fridge.
Knead the dough quickly by hand and roll it until it's 1 cm thick.
Cut out carrots and place them on baking parchment on the tray.
Place the baking tray 30 minutes in the fridge.
Bake the cookies for 8-10 minutes until light brown.
Let the cookies cool on a wire rack.
Stir icing sugar, egg white and lemon juice glossy.
Drip food colours into the icing until it's the colour you want.
Brush the orange icing on the carrots, green for the leafs.
