Shopping list
1 tablespoon olive oil + extra
1 onion & 2 garlic cloves, chopped finely
1 red bell pepper, chopped finely
500 grams ground beef
2 free-range organic eggs
50g breadcrumbs
sea salt & freshly ground black pepper
1 tablespoon flat parsley, finely chopped
2 tablespoons tomato puree
50g manchego cheese, grated
50g serrano ham, cut finely
Serve with French Fries & mixed salad
For daddy we make a delicious Spanish meatloaf on Father's Day. With fries and a fresh salad with little tomatoes it becomes a real feast. We seasoned the minced meat a bit more with nutmeg, paprika and ginger powder. But otherwise we stayed true to the recipe. For our little vegetarians we changed the menu to fries, fresh apple sauce and carrots and peas :)) Everyone happy!
How to make Pastel de Carne
Wash dry and chop the vegetables.
Heat the pan with the olive oil.
Fry onion and garlic until glazed.
Fry the pepper until al dente.
Remove the vegetables from the heat and set aside for now
Add the eggs and bread-crumbs to the minced meat.
Knead it unril all is well combined
Then season with salt and pepper and the extra the spices.
Add the tomato puree, parsley and the vegetable mixture.
Knead it briefly into the minced meat.
Grate in the cheese as well.
Finally add the Serrano ham and mix it in too.
Preheat the oven to 180°C
Grease the baking tin with olive oil.
Put the minced meat mixture in the baking tin.
Bake for 45-50 minutes until nicely brown.
Allow the meat loaf to cool for a moment.
Serve the Pastel de Carne with French fries and a salad.
