2 free-range organic eggs
75ml milk
150g self-raising flour
2 tablespoons caster sugar
a pinch salt
85g dark chocolate chips
sunflower oil, for frying
Ben & Jerry’s ice cream, for serving
maple syrup or clear honey
We bake American pancakes, small, thick and puffy. But that's not all, there are pieces of chocolate in it. And when the pancakes are ready, we scoop Ben & Jerry's ice cream next to them and drizzle - also - maple syrup over them. If that isn't delicious (sweet)!
How to bake American chocolate chip pancakes
Put the eggs and milk in a large bowl.
Beat it together until combined and light and airy.
In a second bowl stir flour, sugar and salt until combined.
Make a well in the center of the flout mixture.
Pour the egg mixture into the well.
Beat until you have a nice, smooth batter.
Chop the chocolate into small pieces.
Set the batter aside for 10 minutes before you start baking
Stir the chocolate into the batter.
Heat the pan and wait for the butter to melt.
Ladle spoonfulls of batter into the hot pan.
Bake the pancakes for 1 - 2 minutes on each side.
Stack on a warmed plate and scoop ice cream on the side.
Finally pour a little maple syrup over the chocolate chip pancakes.
