175g caster sugar
6 lemons
1 stalk lemongrass (lemongrass)
450 ml sparkling water
1 lime
sugar to garnish the glass

This deliciously light and fresh granita is quickly and easily made and  ... it also looks beautiful on your dinner table!


How to make granita

Scrub the wax off the lemons and grate the skin.

Cut the lemons in half.

Juice the lemons and add the juice to the pan.

Crush the lemon grass stalk and add it to the juice in the pan.

Add the water and the sugar also.*

Pour the mixture through a sieve in a freezer box.

Then add the sparkling water.

* Place the pan on low heat and keep stirring until the sugar is completely dissolved. Leave the mixture to rest for 5 more minutes.

Gently stir the mixture and place the box without the lid in the freezer.

Rake through the granita with a fork every 20 minutes to prevent crystallization.*

Find a pair of nice glasses and rub the rim with half a lime.

*Place the Granita minimal 3 hours in the freezer, preferably overnight.

Dip the rim on the glasses in sugar and garnish them with a slice of lime.

A guaranteed showstopper, such a clean and fresh dessert!
