Christmas Truffles

Shopping list
100 ml fresh whipped cream
40 grams of fine granulated sugar
30 ml whole milk
125 grams dark chocolate, 70%
40 grams of butter
1 teaspoon vanilla extract
100g white chocolate
red, white and green sprinkles

Today we make small Christmas presents. For granny and the auntiess we make very tasty Christmas truffles and we put them in pretty boxes. Who wouldn't want to find such a lovely box with her name on it under the Christmas tree?

How to make Christmas Truffles

Chop the dark chocolate finely and put it in a large bowl.

Bring 50 ml cream, with the milk and sugar just to the boil.

Pour the hot cream mixture slowly over the chocolate.

Stir the mixture into the chocolate until the pieces have melted.

Stir the butter and vanilla extract into the warm chocolate.

Pour the cold 50 ml cream slowly into the warm chocolate mixture.

Let the ganache cool until it reaches room temperature.

Place the covered bowl of chocolate ganache in the refrigerator until tomorrow

Fetch the ganache from the fridge.

Roll balls of ganache between your hands.

Roll quickly because the balls melt fast in warm hands

Place the  balls in the refrigerator and let them harden.

Melt white chocolate pieces au bain marie and let it cool but the chocolate should still be runny

Pour the white chocolate over the balls and scatter sprinkles on top.

Let the white chocolate harden and wrap the truffles festively.
