We could go on for hours about the coffee in Italy, literally and figuratively >< The Italians believe they make the best coffee in the world and we think they are absolutely right! Which country has so many types of coffee? Italy's national drink is caffè, as they call their espresso.

Throughout the day, Italians drink caffè espresso, a small cup up to a third filled with black coffee. The doppio is the same espresso but a double dose and the lungo is brewed with a little more water (a bit like our coffee). In Rome, the al vetro is totally hot, again caffè espresso, but served in a small glass.

If you ask for macchiato, you will get caffè with a cloud of milk (fortunately coffee milk does not exist here) and caffelatte is caffè with a lot of milk. Cappuccino has almost become the Netherlands' national coffee: caffè espresso with frothed milk. But just like the French with their café au lait, the Italians only drink cappuccino in the morning.

If you choose Amaro, you ask for caffè without sugar and decaffeinato speaks for itself, coffee without caffeine. Then there is corretto, caffè with a dash of liquor (in North it will be grappa, in South Italy anice).

Now that we know all this, we will get to work ourselves, with the Moka or caffettièra. We use Italian coffee that you can buy in the Netherlands. Coffee beans or ground coffee, for convenience or if you don't have a coffee grinder. The cookies come from the supermarket but are so tasty! In Italy, coffee is only good when it is deep black, hot, strong and sweet, so we will try our best!

How to make espresso in a caffettièra

Fill the reservoir with cold water, up to just below the vent hole.

Put the coffee filter back in and fill it loosely with coffee, do not press the coffee in!

Put the caffettièra on low heat and wait until the coffee drips into the pot.

Turn off the heat and remove the caffettièra, the coffee will continue to flow because the pressure is still high. This to prevent the coffee from getting too hot and taste somewhat bitter.

The coffee has gone through.

Pour the coffee immediately.

Fill the cup up to 1/3.

How to make cappuccino from your espresso

Fill a cappuccino cup up to 1/3 with espresso.

Use a milk frother operated by hand.

Fill to the line with cold whole milk.

Pull and push the knob up and down for a few minutes.

Place the jug without the lid in the micro wave and heat the milk

The milk will be stiff, like in the picture.

Pour the milk on the coffee.

The cappuccino is ready but ...
