Gnocchi with cherry tomatoes

and mozzarella

Shopping list
2 shallots
2 cloves of garlic
3 tablespoons butter
3 tablespoons olive oil
600 grams cherry tomatoes, red & yellow
1 ball of mozzarella
400 grams fresh gnocchi
some oil to grease
1 handful of basil

Gnocchi with cherry tomatoes and mozzarella is a tasty dish for the weekend. You can start well in advance, it is ready quickly and yet completely fresh. Vegetarian but if you prefer non vegatarian you can easily add some fried prosciutto.

How to make Gnocci with cherry tomatoes and mozzarella

Wash and dry vegetables and herbs.

Cut and press the onions and garlic.

Cut the tomatoes in half.

Cut the basil finely.

Why half butter, half oil is used we have no idea

Heat butter and oil.

Fry the onion with the garlic.

Stir in the tomatoes.

Remove the tomato mixture from the heat and set it aside

Grease an oven dish with some oil.

Remove the gnocchi from the heat and drain it.

Put the gnocchi into the greased oven dish.

Preheat the oven to 220°C / 200°C fan

Divide the tomato mixture over the gnocchi.

Slice the mozzarella thinly.

Divide the cheese over the gnocchi.

Melt the cheese in 10 minutes in the oven.

Sprinkle the finely cut basil over the gnocchi.

Optionally, serve the gnocchi with a green salad and grated parmesan cheese on the side
