With this basic recipe for a white icing you make the perfect decoration for your cookies, cupcakes or pastry in three simple steps. Today we decorate the gingerbread men we baked yesterday.

Sift the icing sugar in a bowl and add a few drops of lemon juice

Trickle a small stream of water into the sugar and stir.

Stir with a whisk until the frosting is thick and glossy but just runny.

Spoon the frosting in a piping bag or in a squeeze bottle.

Decorate the men after your own idea with white or coloured icing.

Add coloured sprinkles and hearts or any other decoration you have.

Place the taai-taai on a platter and let the frosting dry for 5-10 minutes.

How to make various colours of frosting

Red, yellow or blue: are the basic colours food colouring you need. Add a few drops of food colouring to white icing. The more drops you add, the darker the colour will be.

Green: mix white icing with a few drops of yellow and one blue droplet of food colouring.

Orange: stir a few drops of yellow and one drop red into white frosting.

Pink: white icing mixed with a tiny drop of red.

Chocolate glaze: mix 250 grams icing sugar with 30 grams cocoa, 25 grams melted butter and 75 ml hot water or milk.

Coffee glaze: Stir 5 grams of instant coffee powder into white icing.
