Potato Hash

Shopping list
2 large potatoes
½ teaspoon chili flakes
1 teaspoon olive oil
1 large yellow bell pepper
1 red onion
125g cherry tomatoes
40g finely chopped kale
4 large free-range organic eggs
sea salt and freshly ground black pepper

optional: pickles or cucumber

Today we're making a tasty, easy-to-make vegetarian Potato Hash for the weekend. And ... this is also a great meal for Sinterklaas evening, because you can prepare a lot in advance.

How to make Potato Hash
 
Preheat the oven to 200°C

Scrub the potatoes clean very well then dry them.
 

Do not peel the potatos but cut them in wedges.

Put them in a baking dish, toss with the chili flakes.
 

Sprinkle with olive oil and season with salt and pepper.

Bake the potatoes for 20 minutes.

Meanwhile wash and cut the vegetables.

Wash the kale and cut it finely.

Drain the kale really well

Sprinkle salt over the kale.

Rub the kale soft between your finger tips.

Toss the vegetables with the potaoes.

Put back into the oven for 15 minutes.

Remove the dish from the oven and stir in the kale.

Make 4 holes in the potato mixture.

Break the eggs in the holes.

Put the dish for ± 5 minutes back into the oven.

Until the egg whites are just set but the yolks still runny

The potato hash is ready, we like to serve pickles or cucumber on the side.
